Tacchino e melanzane al forno - Baked turkey with eggplants

Un secondo perfetto!
A perfect second dish!

Tacchino e melanzane al forno - Baked turkey with eggplants
Tacchino e melanzane al forno - Baked turkey with eggplants

In frigo però avevo solo insalata, kale o cavolo riccio, rucola e melanzane.
E cosa ti scopro? Che tacchino-melanzana è un abbinamento perfetto!!
Senza dubbio da rifare! :D

Tacchino e melanzane al forno

Ingredienti per 2:
1 sovracoscia di tacchino
1 melanzana
2 spicchi d'aglio
maggiorana
sale
pepe
olio evo

I love eggplants!
And I love turkey!
So I can't explain why I had never thought about cooking them together before...
Like as usual, this recipe happened by coincidence.
I had a turkey thigh to bake and I wanted to cook it with some vegetables.
I didn't want potatoes (this is a very strange thing for me) and I had to find something else.
I only had salad, kale, arugula and eggplant in my fridge.
The choice was obviously eggplant. Ça va sans dire, I cannot bake some salad or arugula... ^_^
So, what happened? I discovered that the combination turkey-eggplant is a perfect match!!!
It's a recipe... to be repeated and repeated and repeated! :D

Baked turkey with eggplants

Ingredients for 2:
1 turkey thigh
1 eggplant
2 garlic gloves
marjoram
salt
pepper
extra-virgin olive oil

Place the turkey in a baking pan with the eggplant, cut into wedges.
Crush the garlic gloves, divide them in pieces and spread them all over the meat and the eggplant.
Season with salt, pepper, marjoram and drizzle with olive oil.

Put into a pre-heated oven at 180°C and cook for about an hour.
To check the doneness of the meat, you need to prick the turkey with a knife: if the juices run clear the dish is ready, but if they are pink or red then the meat needs to cook a bit more.
Remove from the oven, let the turkey rest for about ten minutes and serve.
