Quando ho acquistato questo taglio di carne, pensavo che mi sarei trovata di fronte ad un arrosto come tanti altri, senza pensare che mi avrebbe riservato una bella sorpresa.
Ogni paese sembra avere i suoi personali tagli di carne e quindi non sempre è facile capire cosa abbiamo davanti.
E sta proprio qui il bello!
Come diceva qualcuno: "Il mondo è bello perché è vario!" e direi che questo proverbio si addice perfettamente anche all'ambito culinario.
Non smettiamo mai di ricercare cose nuove, perché il bello della vita sta proprio in questo!
Restiamo fanciullini e godiamo appieno di quello che abbiamo intorno a noi!!

Beh, mettiamola così, ho sempre adorato la poetica del fanciullino: guardare il mondo con gli occhi di un bambino e meravigliarci anche delle piccole cose! ;)
In sintesi, appena tolgo dal forno questo brisket, ho avuto parecchi dubbi e il consorte con me ma, una volta capito cosa fare, ci siamo leccati anche i baffi!! ;)


Beef brisket with vegetables - Punta di petto con verdure

Ingredienti per 4

1-1,2 kg di punta di petto di manzo
2 patate
2 cipolle
2 rape
2-3 specchi d'aglio
olio evo
sale
pepe
curcuma
rosmarino
maggiorana

When I bought this cut of meat, I thought I would serve the usual roast beef. However, I didn't know that a big surprise was waiting for me.
Each country has its own primal cut and, when you travel a lot like me, it's not always obvious which cut of meat you are buying.
And this is awesome!
Someone said: "It takes all sorts (to make a world)!" and I think this proverb perfectly applies to the culinary field as well.
Never stop looking for new things, because this is what makes life beautiful!

Wow, I pretty much feel philosophical right now and I am thinking about the famous Italian poet Giovanni Pascoli :D
Well, I always loved Pascoli's poetic of "The Eternal child": look at the world with the eyes of a child and get stunned by it! ;)
Long story short, once I remove this brisket from the oven, I was doubtful about it and so was my partner but, as soon as we understood what to do with that cut, we totally licked our fingers!! ;)


Beef Brisket with vegetables

Ingredients for 4

1-1,2 kg beef brisket
2 potatoes
2 onions
2 turnip
2-3 garlic cloves
extra-virgin olive oil
salt
pepper
turmeric
rosemary
marjoram


Mettiamo la carne in una teglia da forno, inseriamo l'aglio pelato nelle fenditure e condiamo con sale, pepe, curcuma, rosmarino, maggiorana e olio.
Preriscaldiamo il forno a 180°C e inforniamo la carne coperta con l'alluminio per circa 30 minuti.
Tuck the peeled garlic inside the meat and season it with salt, pepper, turmeric, rosemary, marjoram and olive oil.
Preheat the oven at 180°C and put the meat, covered with foil, into it for about 30 minutes.


Nel frattempo puliamo le cipolle, le patate e le rape e condiamole con sale, pepe e olio.
Meanwhile, clean onions, potatoes and turnips, dice them coarsely and season with salt, pepper and olive oil.


Trascorsa mezz'ora di cottura, tiriamo fuori la carne, togliamo l'alluminio, aggiungiamo le verdure, abbassiamo a 150°C la temperatura e cuociamo per circa 3-4 ore.
After 30 minutes cooking, remove the meat from the oven, remove the foil, add the vegetables, low the temperature at 150°C and bake for 3-4 ore.


Togliamo dal forno, lasciamo riposare la carne,
Remove from the oven, let the meat rest,


poi, aiutandoci con due forchette, sfilacciamola.
Portiamo in tavola e...
then, using two fork, shred it.
Serve it and...


... Enjoy the brisket!!

Oggi voglio raccontarvi una cosa: soffro di vertigini 😰
È assodato!
Da anni ormai.
Non posso salire su un campanile, su una torre o affacciarmi da un balcone al 12 piano senza che le gambe tremino e il cuore batta a mille! 😨
Con questa premessa, credevo che prendere un aereo fosse pressoché impossibile...
E invece, sapete cosa?
Ogni volta che volo, se posso, sto nel posto vicino al finestrino, ammiro il panorama e faccio foto a go go!! 😝
Ci credereste mai??
Io ancora non sono riuscita a darmi una spiegazione...
Vista l'impossibilità di decifrare questo paradosso, passiamo ad un argomento che non si smentisce mai!! 😁
Oggi andiamo sul classico, un piatto delle feste che mette sempre tutti d'accordo: il polpettone ripieno!!😋


Polpettone ripieno al forno con patate e pomodorini

Ingredienti per 4

500g di carne di manzo macinata
80g di formaggio morbido
prezzemolo
2 foglie di menta
2 spicchi d'aglio
paprika dolce
curcuma
zenzero
600g di patate
1/2 cipolla
4 fette di bacon
formaggio caciotta
300g di spinaci
pomodorini
1 limone
maggiorana
timo fresco
rosmarino fresco
sale
pepe
olio evo

That said, I thought that take a plane was quite impossible for me...
Guess what??
Every time I flight, if I may, I seat next to the windows, enjoy the view and take a lot of pictures!! 😝
Would you believe it??
I still cannot explain it to myself...
Seen I cannot decode this paradox, let's talk about a solid topic!! 😁
Today I will prepare a classic recipe, an holiday dish that everybody loves: stuffed meatloaf!!😋


Baked stuffed meatloaf with potatoes and cherry tomatoes

Ingredients for 4

500g minced beef meat
80g soft cheese
parsley
2 mint's leafs
2 garlic gloves
sweet paprika
turmeric
ginger
600g potatoes
1/2 onion
4 bacon slices
caciotta cheese
300g spinach
cherry tomatoes
1 lemon
marjoram
fresh thyme
fresh rosemary
salt
pepper
extra-virgin olive oil


Laviamo e cuociamo gli spinaci in una padella a fuoco basso, senza aggiungere ulteriore acqua,
Wash and cook the spinach in a pot over low heat, without adding any water,


finché non saranno cotti.
until cooked.


Tritiamo il prezzemolo, la menta e l'aglio e
Chop parsley, mint and garlic and


mettiamoli in una ciotola capiente insieme alla carne e al formaggio morbido.
Condiamo con succo di limone, paprika, curcuma, zenzero, sale e pepe e amalgamiamo il tutto.
put them with the meat and the soft cheese in a big bowl.
Season with lemon juice, paprika, turmeric, ginger, salt and pepper and combine all the ingredients.


Prendiamo un foglio di carta forno e stendiamoci sopra la carne fino a formare un rettangolo.
Take a parchment paper and shape the meat mixture into a rectangle.


Adagiamo il bacon,
Place bacon,


gli spinaci,
spinach,


e la caciotta tagliata a fettine.
and the sliced caciotta cheese.


Aiutandoci con la carta forno, arrotoliamo il tutto e mettiamo a raffreddare in frigo per un'oretta, senza togliere la carta forno.
Using the parchment paper, roll up the meatloaf and let it cool into the fridge for about an hour, without taking off the parchment paper.


Nel frattempo peliamo, tagliamo a cubetti le patate e affettiamo la cipolla.
Condiamo con sale, pepe, maggiorana e un filo d'olio.
Meanwhile peel and dice the potatoes and slice the onion.
Season with salt, pepper, marjoram and olive oil.


Accendiamo il forno a 200°C.
Togliamo il polpettone dal frigo, apriamo la carta forno e mettiamo in una pirofila.
Disponiamo intorno le patate, le cipolle e i pomodorini tagliati a metà.
Condiamo con rosmarino, timo e olio e inforniamo.
Preheat the oven at 200°C.
Remove the meatloaf from the fridge, open the parchment paper and put it in a baking pan.
Place potatoes, onion and cherry tomatoes cut in halves all around the meatloaf.
Season with rosemary, thyme and olive oil and put into the preheated oven.


Cuociamo per circa 40 minuti.
Se le patate non sono ancora pronte, togliamo il polpettone e rimettiamole in forno finché non saranno ben cotte.
Cook for about 40 minutes.
If potatoes are not already done, take off the meatloaf and put them again into the oven until perfectly cooked.


Adagiamo la carne su un piatto da portata, circondata dalla verdura,
Place the meatloaf on a serving plate, surrounded with the vegetables


e portiamo in tavola.
and serve it.

Da quando ho trovato il mio macellaio di fiducia, posso permettermi anche di usare il macinato!!
Non potevo chiedere di meglio! ;)
Hamburger, polpette e polpettoni non sono più off-limits e posso sbizzarrirmi a più non posso.
C'è però una cosa che non ho mai capito: perché la carne macinata saltata semplicemente in padella deve essere esclusivo appannaggio dei bimbi????
Io mi dissocio!!
E oggi per cena preparo un bel piatto di carne macinata cotto in padella con degli spinaci!!
Vediamo se dopo averlo assaggiato si continuerà a dire che il macinato è solo per i piccolini! ;)

I could not ask for more! ;)
Hamburgers, meatballs and meatloaf are not off-limits anymore and I can have fun like crazy.
There is one thing I never understood, though: why stir-fry minced meat must be a prerogative for children alone, like many adults keep saying?
I disagree!!
So, today I am preparing a nice stir-fry minced meat dish with spinach for dinner!!
Let's see if anyone will keep saying that minced meat is for children alone! ;)


Spinaci e macinato

Ingredienti per 2:
300g di carne di manzo macinata
500g di spinaci freschi
1 cipolla media
1 spicchio d'aglio
zenzero
curcuma
paprika dolce
sale
pepe
olio evo


Spinach and minced meat

Ingredients for 2:
300g beef minced meat
500g fresh spinach
1 medium onion
1 garlic clove
ginger
turmeric
sweet paprika
salt
pepper
extra-virgin olive oil


Affettiamo la cipolla e l'aglio e facciamoli soffriggere in una padella con l'olio.
Slice the onion and the garlic clove and brown them in a pan with olive oil.


Aggiungiamo il macinato, condiamo con sale, pepe, curcuma, zenzero e paprika dolce e cuociamo per 5-10 minuti.
Add the minced meat, season with salt, pepper, turmeric, ginger, sweet paprika and cook for 5-10 minutes.


Aggiungiamo gli spinaci e cuociamo per 3-4 minuti, finchè non si saranno ammorbiditi.
Add the spinach and cook for 3-4 minutes, until it is wilted.


Togliamo dal fuoco
Remove from the heat


e portiamo in tavola.
and let's serve dinner.

Accantoniamo per un momento i broccoli e la zucca e dedichiamoci a questa zuppa tradizionale scozzese, dove si fondono e si sposano perfettamente l'orzo, la carne e le verdure. Ideale nelle fredde serate invernali dove il gelo e la neve rendevano tutto più difficile, tanti anni fa, così come oggi.
Questo piatto, infatti, vede la luce nel 17° secolo e da allora è divenuto famoso in tutto il mondo.
L'ingrediente forte generalmente è l'agnello o il montone o il manzo. Io ho optato per quest'ultimo per rendere il tutto più leggero e digeribile, perché si sa, per quanto l'ovino sia incredibilmente buono, non è esattamente un alimento che ti fa dormire sonni tranquilli.
Lo Scotch Broth si può servire immediatamente o aspettare il giorno dopo ed essendo una zuppa io ho voluto allungare i tempi per farlo insaporire di più.
Tradizionalmente viene servito durante la "Burns Night supper", l'annuale celebrazione in onore del poeta scozzese Robert Burns. L'evento si tiene ogni 25 gennaio, data di nascita di Burns ed è diventata una tradizione soprattutto in Scozia, ma anche nell'Irlanda del Nord. E dal momento che il 25 gennaio sta per arrivare, siamo ancora in tempo :)
E se poi volete andare fino in fondo, non c'è niente di meglio che accompagnare il tutto con un bel pezzo di "Soda bread" imburrato (di cui potete trovare la ricetta qui) ;)


Scotch Broth - Zuppa scozzese

Ingredienti

400g di manzo
50g di orzo
1 cipolla
1 spicchio d'aglio
2 rape
2 carote
1 gambo di sedano
1 porro
sale
pepe
prezzemolo

Let's put aside broccoli and pumpkins for a moment and dedicate the respect that this traditional Scottish broth deserves. This is a dish where barley, meat and vegetables together create a symphony of flavors. Perfect during the cold winter nights when ice and snow made everything difficult, many years ago as well as today.
In fact, the origins of this dish date back to the XVII century. Since then, it has become famous worldwide.
Usually, the main ingredient is lamb, or mutton, or beef. I chose beef for easier digestion. You know, sheep meat is terrific, but might not be the best for a good night sleep.
Scotch Broth can be served immediately, or you can wait until the day after. I chose to wait, thus allowing for the taste to emerge completely.
Traditionally, you would prepare this dish during the "Burns Night supper", the day dedicated to the Scottish poet Robert Burns which takes place every year on 25th January, the day of his birth. And this is not only a Scottish tradition as it is celebrated in Northern Ireland as well. Because it is not 25th January yet, we are still in time :)
If you want to follow the tradition to the letter, there is nothing better than a good piece of buttered "Soda Bread" (you can find here the recipe) to accompany this soup. ;)


Scotch Broth

Ingredients

400g beef
50g barley
1 onion
1 garlic clove
2 turnips
2 carrots
1 celery stick
1 leek
salt
pepper
parsley


Tagliamo la carne a dadini, togliendo più grasso possibile,
Dice the meat, remove all the fat,


mettiamola in una pentola capiente e copriamo con l'acqua.
put it into a big pot and cover with water.


Facciamo bollire e togliamo la schiuma che si formerà in superficie.
Aggiungiamo l'orzo, abbassiamo la fiamma e lasciamo sobbollire per circa un'ora.
Nel frattempo tagliamo grossolanamente la cipolla, l'aglio, le rape, le carote, il sedano e il porro.
Bring to a boil and skim the grease accumulated on the surface.
Add barley, lower the heat and let simmer for about an hour.
Meanwhile roughly cut onion, garlic, turnips, carrots, celery and leek.


Aggiungiamo tutto nella pentola, saliamo, pepiamo e lasciamo cuocere un'altra ora.
Put the vegetables into the pot, season with salt, pepper and let cook for another hour.


Togliamo dal fuoco e facciamo raffreddare.
Teniamo in frigorifero per una notte.
Il giorno dopo togliamo il grasso solidificato in superficie, se se ne forma, riscaldiamo di nuovo, aggiustiamo di sale e di pepe, in caso di bisogno, e serviamo la zuppa bella fumante e con una spolverata di prezzemolo!!
Remove from the heat and let it cool.
Put into the fridge during one night.
Next day remove the congealed grease on the surface, if there is any, heat again, season with salt and pepper, if necessary, and serve the hot soup with a sprinkle of parsley!!
