Salsa sabbazza - The Sabbazza sauce

Non si sa come e per quale ragione, ma pare che il consorte sia di nuovo in grado di mangiare prezzemolo senza problemi.
Non abbiamo capito come sia successo, ma sfrutto decisamente la situazione e sto preparando tanti di quei piatti con il prezzemolo che quasi mi metto paura da sola! :D
Ed è una fortuna, perché in questo periodo ho la mania del trito di erbe aromatiche e non solo, e senza poter usare il prezzemolo sarebbe stata una lotta impari.
Quindi oggi voglio mostrarvi una cosa che ho preparato prendendo spunto dalla chimichurri, una salsa argentina che abbiamo scoperto da poco più di un anno:D.
Il nome deriva da uno sciocco gioco di parole che ci ha fatto ridere così tanto durante la cena che abbiamo deciso di ricordarlo così :D

Ingredienti:
prezzemolo
aglio sbucciato
pomodori secchi
buccia di limone
sale
olio evo

We don't know why but my partner who is selective intolerant of parsley, apparently has no problems with the parsley I can find at the local market place.
We don't know what happened but I am certainly taking advantage of this situation by preparing so many dishes with parsley that I am getting scared of myself! :D
And it is such good news, because my latest craze is chopping of not only aromatic herbs but almost every ingredients I have at my disposal, and if I were not allowed to use parsley, it would be unfair.
Well, today I will show you a sauce for which I got inspiration from the chimichurri, an Argentinian sauce I discovered one year ago or so.
The name comes from a play on words gone south during dinner but we had so much fun that we decided it deserved to be remembered :D


The Sabbazza sauce

Ingredients:
parsley
peeled garlic
dried tomatoes
lemon zest
salt
extra-virgin olive oil


Disponiamo tutti gli ingredienti su un tagliere di legno
Place all the ingredients on a wood cutting board


e tritiamoli usando una mannaia cinese (come ho fatto io) o una mezzaluna.
and chop them using a chinese cleaver knife (like I did) or a mezzaluna knife.


Spostiamo il trito in una ciotola, irroriamo con abbondante olio evo, condiamo con un pizzico di sale, mescoliamo e la salsa è pronta.
Put the chopped ingredients in a bowl, drizzle with a lot of olive oil, season with salt, mix and the sauce is ready.

Un po' come per tutte le altre salse, anche la besciamella ha la versione ufficiale e quella non ufficiale, ma il mistero sulle sue origini non è ancora stato svelato completamente
La tradizione ne attribuisce la paternità al marchese di Nointel, Louis de Béchameil, da cui ha preso il nome, responsabile delle cucine di re Luigi XIV.
La versione non ufficiale, invece, afferma che il creatore della béchamel sarebbe François Pierre de La Varenne, cuoco del marchese D'Uxelles e Béchamel non avrebbe fatto altro che migliorarla, dandole così il nome.
Ma se pensate che sia finita qui vi sbagliate! Sembra che l'origine della besciamella sia tutta italiana: nello specifico pare sia nata in Toscana e poi portata in Francia da Caterina de' Medici.
Quindi il mistero è bello denso, proprio come la nostra amata béchamel.
Preparata con ingredienti semplicissimi, burro, farina e brodo di carne in origine, sostituito poi dal latte, non richiede grandi sforzi, se non mescolare con la frusta finché il composto non si addensa, ma, considerando come trasforma i piatti, penso sia un sacrificio accettabile! :D
Ovviamente io ho apportato le mie modifiche e l'ho preparata con la farina di farro... eccezionale!


Sauce béchamel - Salsa besciamella

Ingredienti:
100g di burro
100g di farina di farro
1l di latte
sale


Apparently, all the most famous sauces in the world have an official and an unofficial version about their origins. The bechamel sauce is not an exception and the mystery about its roots is still unsolved.
According to the tradition, the bechamel sauce was created by the Marquis of Nointel, Louis de Béchameil, the person responsible for the kitchens of Louis XIV's.
The unofficial version claims that the creator of the bechamel was François Pierre de La Varenne, the chef of the Marquis D'Uxelles, and that Mr. Béchamel did anything else but improve it and give it his name.
But, if you think this is all, you're wrong!
It seems that the real country of origin of this sauce is Italy, more precisely Tuscany, and only afterwards Caterina de' Medici brought it in France!
As you can see, we are in front of a big mystery here, as thick as our loved sauce.
Made with very simple ingredients, butter, flour and stock (later to be replaced with milk), it does not require a big effort, apart from whisking the sauce until it thickens. It is a sacrifice but, if you think of how it can transform any dish, I think we can gladly accept it! ;) :D
As usual, I modified a bit the recipe and I chose to use the spelt flour... just awesome!


Sauce béchamel - Bechamel sauce

Ingredients:
100g butter
100g spelt flour
1l milk
salt

In una casseruola facciamo sciogliere il burro a fuoco lento,
In a saucepan melt the butter over a low heat,


aggiungiamo la farina
add the flour


e mescoliamo. In questo modo avremo il cosiddetto roux bianco.
and mix. In this way we will obtain the so-called white roux.


Saliamo, pepiamo e versiamo il latte caldo.
Season with salt and pepper and pour the warm milk.


Giriamo costantemente la frusta, facendo attenzione a evitare i grumi e portiamo a bollore continuando a mescolare finché il composto non si addensi.
Lasciamo raffreddare coprendo la salsa con la pellicola in modo che non si formi una pellicina in superficie.
Usiamo la besciamella per preparare lasagne, cannelloni, crepes o altro, c'è l'imbarazzo della scelta! ;)
Whisk continuously, make sure there are no lumps left and, while you keep whisking, bring it to a boil until the sauce thickens.
Remove from the heat, let it cool and cover it with a plastic wrap.
We can use the bechamel for lasagne, cannelloni, crepes and basically anything you want... you are spoilt for choice! ;)
