La Rubrica del Venerdì: Mana'ich - Friday's Page: Mana'ich

Impossibile resistere!! 😂
Impossible to resist!! 😂

Mana'ich - Pane allo zaatar

Ingredienti per il pane

160g farina integrale
140g farina di farro
100ml di latte
90ml di acqua
4g lievito di birra secco
7g di sale

Ingredienti per il condimento

2 cucchiai di zaatar
2 cucchiai di olio evo

And now, after preparing the zaatar, how can you use it (you can find the recipe here: Friday's Page: Zaatar)?
The simplest way is using it as seasoning for a tasty starter, which is a popular Levantine food, halfway between bread and pizza.
As soon as I saw this recipe I knew I couldn't get out of doing it... so, let's not waste anymore time and start kneading!!

Mana'ich - Zaatan bread

Ingredients for the bread

160g whole-wheat flour
140g spelt flour
100ml milk
90ml water
4g dry yeast
7g salt

Ingredients for the seasoning

2 tablespoon of zaatar
2 tablespoon of extra-virgin olive oil

Mix flours, milk, water, dry yeast and salt in a bowl.

Quando l'impasto sarà ben amalgamato e liscio,
Once the dough is well combined and smooth,

let it rise for a couple of hour or until it is doubled in size.
Then divide it in 4 pieces and let it rest for half an hour.

Accendiamo il forno a 220°C, stendiamo l'impasto,
Preheat the oven at 220°C, roll out the dough,

prepariamo il condimento mescolando olio e zaatar
prepare the seasoning mixing olive oil and zaatar

e spalmiamolo sopra il pane.
and spread it on top of bread.

Inforniamo e cuociamo per circa 10 minuti.
Sforniamo e portiamo in tavola!
Buonissimo!! 😋
Put it into the oven and bake it for about 10 minutes.
Remove from the oven and serve it!
Delicious!! 😋

Enjoy your bread!!

La Rubrica del Venerdì: Rhubarb muffin - Friday's Page: Rhubarb Muffin

Facciamo il pieno di zuccheri!! 😁
Brimful of sugar!!😁

Today is a dreary day: outside it's sunny actually but I feel dreary anyway.
Even if I slept like a log and I went to bed early, I feel so tired... and think that yesterday was a fantastic day that gives me an unexpected strength: I found I had a very clear idea about what I want!!! 😉
Considering my current weariness, let's put it in this way... I need sugar!!! 🍰
By any chance is this weakness an excuse to eat sugar!!?? 😝
It's Friday, so I will use an ingredient not so known in Italy but that I love: rhubarb!! 😋

Rhubarb muffin

Ingredients for 12 muffins

250g spelt flour
125g butter
2 eggs
150g vanilla brown sugar (you can find here the recipe)
1/2 baking powder
110ml milk
15g rhubarb syrup (you can find here the recipe)
1 pinch of salt
200g cooked rhubarb pulp leftover from syrup recipe

Mix the flour, sugar, baking powder and salt in a small bowl.

Whisk the eggs, the butter melted and cooled, the milk and rhubarb syrup in a big bowl.

Uniamo gli ingredienti secchi con quelli liquidi,
Combine di dry ingredients with the liquids one,

add the rhubarb pulp and gently stir.

Put the fluted paper cases into the cup muffin tin, divide the batter into the cups and sprinkle brown sugar over each muffin.

Bake in a preheated oven at 180°C for about 25 minutes or until the muffins are golden brown and check for doneness using a toothpick, which should come out clean.

Remove them from the oven, let them cool and these delicious muffins are ready to serve!!

Crostata bicolor - Two colours crostata

Festeggiamo!!😆
Let's celebrate!!😆

Crostata bicolor - Two colours crostata
Crostata bicolor - Two colours crostata

Crostata bicolor

Ingredienti:
300g di farina di farro
150g di burro
150g di zucchero integrale di canna vanigliato
buccia di limone
1 uovo
marmellata di pesche
gelatina di ribes rosso

I think we can celebrate yesterday's post and a good crostata is just what we need!!! 😋
This time I made something I never made before... I used not one, but two different jams! 😂
The design on top of crostata made with shortcrust pastry is a bit different from the usual one.
The result was a masterpiece of crostata, visually perfect and deliciously tasty!! ^_^

Two colours crostata

Ingredients:
300g spelt flour
150g butter
150g vanilla brown sugar
grated lemon zest
1 egg
peach jam
redcurrant jelly

Mix all the ingredients, but the jams, in a bowl.

Once all the ingredients are well combined, make a ball, wrap with plastic and refrigerate for about half an hour.

After half an hour, remove from the fridge the dough, take 3/4 of it and roll it out in a crostata mould lined with parchment paper. Make sure to form a 1cm border.

Fill the pastry with jams, alternating the peaches and the redcurrant in order to create a play of colours 😁

Mettiamo in forno già caldo a 180°C e cuociamo pe circa 30-35 minuti.
Add some strips made with the extra dough to mark the colours
Put into a pre-heated oven at 180°C and cook for 30-35 minutes.

Togliamo dal forno, lasciamo raffreddare completamente e poi serviamo.
Remove from the oven, let it cool completely and serve it.

Pizzette da antipasto!
Mini pizzas as starters!

Pizzette cipolla rossa e olive nere - Mini pizzas with red onion and black olives
Pizzette cipolla rossa e olive nere - Mini pizzas with red onion and black olives
Come avrete notato, ultimamente sembra io stia facendo solo pizzette...

As a matter of fact, it seems I have been making only mini pizzas lately... well, it's true! And do you know why? Because they are so quick to prepare!!:D
I use only half a dose of dough necessary to prepare an entire pizza, but when you want to eat it so much and have already planned something else for dinner... what can you do? Small pizzas! For such a case, they are perfect indeed! :)
We can have a delicious pizza starter without ruining the plans!

Pizzette cipolla rossa e olive nere

Ingredienti per 4 pizzette:
1/2 impasto per pizza con farina di farro
1 cipolla rossa
olive nere
sale
olio evo

Mini pizzas with red onion and black olives

Ingredients for 4 mini pizzas:
1/2 spelt pizza dough
1 red onion
black olives
salt
extra-virgin olive oil

Stretch the dough and put it into 4 little greased molds. Season with salt and olive oil and let it rest for an hour.
Meanwhile pit the olives, cut them and slice the onion.
When the rising process is complete, put olives and onion on the pizza and season with salt and olive oil.

Sforniamo e portiamo a tavola!

Muffin ai mirtilli - Blueberry muffins

A prova di... consorte! :D
Partnerproof! :D

I tried this recipe only one time, so maybe it's too early to celebrate, but the result is so promising, especially considering what my partner did!
Usually, when a cake is inside the oven, you don't have to open it, otherwise it is possible that the cake collapses. Well, not everyone know this rule...
My partner doesn't know it or should I say didn't know it until yesterday, but I think he will not forget it anymore!!:D
What's happened? I will tell you: I had the brilliant idea to ask him to have a look to the muffins cooking into the oven. Maybe it was my fault, because I said nothing else...
Well, as a matter of fact he went to the oven and opened it a little bit to look inside, because there was no light (when the timer of my oven rings, the light turns out by default) and he couldn't see nothing from the outside...
As soon as I noticed what he did, I let out a scream (I even scared him, poor dear), and I was desperate because I was sure those beautiful muffins he was describing me would turn intosome flaccid things :(
Hopeless, I let them cook for other 5 minutes, made the toothpick test and turned the oven off.
And in spite of everything, at the end, the muffins were perfect, they lowered only a little bit, but they were simply delicious! :D

Blueberry muffins

Ingredients for 12 muffins

250g spelt flour
125g butter
2 eggs
150g vanilla brown sugar (you can found the recipe here: vanilla brown sugar)
1/2 packet of baking powder
125ml milk
1 pinch of salt
150g fresh blueberries

Preheat the oven at 180°C.
In a medium bowl, whisk together the milk, eggs and the thiny sliced soft butter until the butter will be completely melted.

Combine the flour, the sugar, the baking powder and the salt in another bowl.

Aggiungiamo gli ingredienti asciutti a quelli liquidi,
Put the dry ingredients into the liquid ones,

facciamo incorporare bene tutti gli ingredienti, poi aggiungiamo i mirtilli.
stir carefully, then add the blueberries.

Gently stir, put the fluted paper cases into the cup muffin tin and divide the batter into the cups.
Sprinkle brown sugar over each muffin and put into the oven.

Bake for about 25 minutes until the muffins are golden brown and check for doneness using a toothpick, which should come out clean.

Sforniamo, facciamo raffreddare ed ecco pronti 12 muffin fantastici!!

La Rubrica del Venerdì: Sauce Béchamel - Friday's Page: Sauce Béchamel

La salsa per eccellenza!
The sauce par excellence!

Ingredienti:
100g di burro
100g di farina di farro
1l di latte
sale

Apparently, all the most famous sauces in the world have an official and an unofficial version about their origins. The bechamel sauce is not an exception and the mystery about its roots is still unsolved.
According to the tradition, the bechamel sauce was created by the Marquis of Nointel, Louis de Béchameil, the person responsible for the kitchens of Louis XIV's.
The unofficial version claims that the creator of the bechamel was François Pierre de La Varenne, the chef of the Marquis D'Uxelles, and that Mr. Béchamel did anything else but improve it and give it his name.
But, if you think this is all, you're wrong!
It seems that the real country of origin of this sauce is Italy, more precisely Tuscany, and only afterwards Caterina de' Medici brought it in France!
As you can see, we are in front of a big mystery here, as thick as our loved sauce.
Made with very simple ingredients, butter, flour and stock (later to be replaced with milk), it does not require a big effort, apart from whisking the sauce until it thickens. It is a sacrifice but, if you think of how it can transform any dish, I think we can gladly accept it! ;) :D
As usual, I modified a bit the recipe and I chose to use the spelt flour... just awesome!

Sauce béchamel - Bechamel sauce

Ingredients:
100g butter
100g spelt flour
1l milk
salt

In a saucepan melt the butter over a low heat,

aggiungiamo la farina
add the flour

e mescoliamo.
and mix. In this way we will obtain the so-called white roux.

Saliamo, pepiamo e versiamo il latte caldo.
Season with salt and pepper and pour the warm milk.

Whisk continuously, make sure there are no lumps left and, while you keep whisking, bring it to a boil until the sauce thickens.
Remove from the heat, let it cool and cover it with a plastic wrap.
We can use the bechamel for lasagne, cannelloni, crepes and basically anything you want... you are spoilt for choice! ;)
