Carnevale è alle porte ed è bene cominciare ad esercitarci sulle ricette tipiche.
Potremmo preparare questa ricetta anche al forno, ma il bello del Carnevale sta proprio nei dolci fritti e pieni di zucchero!!
Ora non dico che bisogna esagerare, ma una volta all'anno possiamo sgarrare e deliziarci con queste leccornie... e poi il limone sgrassa e quindi è perfetto con il fritto!! :D
Oggi proverò a preparare per la prima volta i limoncini... allacciate le cinture, si parte!!


Limoncini di Carnevale

Ingredienti per circa 30 limoncini

Ingredienti per la pasta

300g di farina
50g di burro
50g di zucchero
8g di lievito secco
1/2 bicchiere di latte
1 uovo
olio di arachidi per friggere

Ingredienti per il ripieno

150g di zucchero 2 limoni, solo la buccia
1 arancio, solo la buccia


Mardi Gras is coming and I must practice my traditional Carnival sweets skills.
This dessert might also be baked, but in Italy we are used to eat fried sweets tossed with a lot of sugar on Mardi Gras!!
Now, I know we must not exceed, but we can fall off the wagon and enjoy these delicacies once a year... after all, lemon is perfect with fried food!! :D
This is my very first attempt with limoncini so... fasten your seatbelts, let's go!!


Mardi Gras limoncini

Ingredients for about 30 limoncini

Ingredients for the dough

300g flour
50g butter
50g sugar
8g dried yeast
1/2 glass of milk
1 egg
peanut oil for frying

Ingredients for the stuffing

150g sugar 2 lemons zest
1 orange zest


Grattugiamo la buccia dei limoni e dell'arancio e uniamola allo zucchero in una ciotola.
Mescoliamo bene il composto e lasciamo riposare.
Grate the lemons and orange peel and combine it with the sugar in a bowl.
Mix them carefully and set it aside.


Nel frattempo in una ciotola capiente mescoliamo la farina, il burro fuso, lo zucchero, l'uovo e il lievito sciolto dentro il latte.
Meanwhile, mix the flour, the melted butter, the sugar, the egg and the yeast dissolved in warm milk in a bowl.


Mescoliamo finché non otteniamo un impasto morbido e liscio.
Mix until you have a smooth and soft dough.


Lasciamo riposare una mezz'oretta, poi stendiamo, distribuiamo il ripieno,
Let it rest for about half an hour, then roll it out, distribute the stuffing on top of it,


arrotoliamo
roll it into a spiral


e tagliamolo a rondelle.
and slice it.


Facciamo scaldare l'olio e friggiamo. Scoliamo e appoggiamo su carta forno.
Portiamo in tavola e...
Heat the peanut oil and fry the limoncelli. Drain them and place them on top of parchment paper.
Serve them and...


... Bon Appétit!!

Preparo spesso la focaccia: semplice da fare, non richiede troppo impegno da parte mia (il che vuol dire che a parte i primi 5 minuti, poi io posso fare altro) e soprattutto non prevede lunghe lievitazioni.
Ma nelle ultime due settimane sembra che io non prepari altro!!
Perché?
Perché ho avuto la brillante idea di farla ripiena... e mi si è aperto un mondo!! :D
In pochissimo tempo, si ha a disposizione un pasto completo o un antipasto senza dover fare salti mortali!!
E si sa, dentro la focaccia possiamo metterci di tutto.
Il primo esperimento ha visto il salmone, il secondo... lo speck!!
Non vi dico neanche quanto è buona!! Gnammm!!!
Provare per credere! ;)


Focaccia ripiena con speck, insalata e gouda

Ingredienti per l'impasto

500g di farina
15g di lievito di birra fresco
350ml di acqua
20g di olio evo
10g di sale

Ingredienti per la salamoia

65g di olio evo
65ml di acqua
10g di sale

Ingredienti per il ripieno

16 fette di speck
gouda
insalata
maionese alla senape

Focaccia is often on my table: it is simple to make, not too demanding (except for the first 5 minutes, then I can dedicate time to other things) but most of all it rises fast.
Anyway, in the last two weeks it seems I made nothing else than focaccia!!
Why?
Because I had the brilliant idea to stuff it... and a new world suddenly disclosed in front of me!! :D
You will quickly have a complete meal or a starter without jumping through hoops!!
And you know, you can stuff it with anything you want.
First attempt: salmon.
Second attempt: speck ham!
You wouldn't believe how delicious it was!! Yummy!!!
See for yourself! ;)


Stuffed focaccia with speck ham, lettuce and gouda cheese

Ingredients for the dough

500g all-purpose flour
15g fresh yeast or 4g of dry yeast
350ml water
20g extra-virgin olive oil
10g salt

Ingredients for seasoning

65g extra-virgin olive oil
65ml water
10g salt

Ingredients for the filling

16 slices of speck ham
gouda cheese
lettuce
mustard mayonnaise


Facciamo sciogliere il lievito con poca acqua in una ciotola capiente, poi aggiungiamo la farina, l'olio, il sale e l'acqua restante.
Mescoliamo con un cucchiaio finché gli ingredienti non si saranno ben amalgamati.
Se l'impasto risultasse troppo asciutto possiamo aggiungere un pochino d'acqua, poche gocce alla volta.
Melt the yeast in a little amount of water in a big bowl, then add the flour, the olive oil, the salt and the remaining water.
Stir with a spoon until all the ingredients are well combined.
If the dough feels too dry, you can add a little water, few drops at a time.


Lasciamo lievitare fino al raddoppio.
Let the dough rise until double.


Versiamo il composto in una teglia rivestita di carta forno e stendiamolo delicatamente usando i polpastrelli ben unti.
Pour the dough in a baking pan lined with parchment paper and roll it out with your greased fingertips.


Lasciamo lievitare di nuovo per circa mezz'ora.
Nel frattempo prepariamo la salamoia: versiamo l'acqua, l'olio e il sale dentro un barattolo e shakeriamo.
Trascorso il tempo di lievitazione, versiamo la salamoia sull'impasto, creando dei buchi per distribuirla bene.
Anche se sembrerà troppa, mettiamola tutta, renderà la focaccia bella morbida.
Let it rise again for half an hour.
Meanwhile prepare the seasoning: pour the water, oil and salt in a little can and shake it.
Once the dough is risen again, pour the seasoning on top of it and create some holes to distribute it perfectly.
Even if you think the liquid is too much, don't worry, you have to use it all because the focaccia will become very soft thanks to this seasoning.


Lasciamo riposare e accendiamo il forno alla massima temperatura, nel mio caso 250°C.
Inforniamo e abbassiamo a 220°C.
Cuociamo per 15 minuti, abbassiamo di nuovo la temperatura a 200°C e cuociamo per altri 15-20 minuti, finché la focaccia non sarà bella dorata.
Let it rest and turn on the oven at the maximum temperature, 250°C for me.
Put the pan into the oven and low the temperature at 220°C.
Bake for 15 minutes, then low again the temperature at 200°C and cook for other 15-20 minutes until the focaccia is golden.


Togliamo dal forno e lasciamo raffreddare completamente, dopodiché dividiamola in 4 parti e tagliamo a metà ogni pezzo.
Spalmiamo la maionese,
Remove from the oven and let it cool completely, then cut the focaccia in 4 pieces and in halves each one.
Spread the mayonnaise,


aggiungiamo 4 fette di speck in ogni pezzo di focaccia,
add 4 slices of speck ham each piece of focaccia,


una foglia di insalata e del gouda.
a leaf of lettuce and some gouda cheese.


La focaccia è pronta per essere portata in tavola!!
The focaccia is ready to serve!!

Il 2 gennaio è un giorno particolare per me.
Chi mi segue saprà che oggi si festeggia una ricorrenza molto speciale: Foodie in Translation compie gli anni!!!!
Buon Compleanno a noi!!! 🎉🎂
Sembra ieri che scrivevo il primo post e invece ne sono passati di articoli e di ricette sotto ai ponti!! 😊
Da tradizione ci vorrebbe una bella torta, ma è lunedì e come ben sapete la nostra rubrica prevede... pizza!!!
Ecco quindi la prima focaccia di questo nuovo anno, molto versatile perché perfetta come antipasto, come secondo e come pietanza da picnic.
Noi l'abbiamo provata durante il Cenone di Capodanno.
Che maniera gustosa per cominciare l'anno nuovo come si deve! 😁
Non perdiamo altro tempo e mettiamoci all'opera!

Ingredienti per l'impasto

500g di farina
15g di lievito di birra fresco

The tradition suggests we should have a big birthday cake, but today is Monday so we are going to bake a delicious... pizza!!!
So, let's prepare the first focaccia of the year.
This one is versatile, indeed: perfect as starter, fantastic as second course, ideal as picnic finger food.
We had some during the New Year's Eve Dinner.
What a delicious way for starting the new year with the right foot! 😁
But let's not waste time any more, let's get down to work!

Stuffed focaccia with smoked salmon and lettuce

Ingredients for the dough

500g all-purpose flour
15g fresh yeast or 4g of dry yeast
350ml water
20g extra-virgin olive oil
10g salt

È venerdì, pronti per una nuova ricetta internazionale.
Niente patate: oggi prepariamo un classico piatto di mare della cucina francese.
Un pesce che non ho mai cucinato e quindi una new entry per questo blog! ^_^
Qualcuno potrebbe pensare si tratti di una ricetta italiana, tanto è conosciuta anche da noi, ma c'è un elemento che toglie ogni dubbio: il burro!!
Noi avremmo usato l'olio d'oliva! 😝
Quindi, parliamo di un secondo piatto che deve il suo nome al meunier, che altro non è se non il mugnaio che macina la farina.
Che c'entra il mugnaio? Beh, in questa ricetta, oltre al burro, abbiamo bisogno della farina... e di una bella sogliola freschissima, ovvio!! 😁
Un piatto così semplice, veloce e buono da leccarsi letteralmente le dita!
D'altronde è scontato: se il prodotto è fresco, genuino e di qualità, anche un pizzico di farina e del burro compiono il miracolo!! 😉

Sole à la meunière - Sogliola alla mugnaia

Ingredienti per 2:
2 sogliole intere
30g di burro
farina
succo di limone
sale

It's Friday, time for a new international recipe.
No potatoes today: we are having a classic French seafood dish.
A fish that I never cooked before so it's a new entry for this blog! ^_^
Someone might think this is an Italian recipe, due to its wide popularity in Italy, but there is an ingredient that takes all doubts away: butter!!
Italians would have used some extra-virgin olive oil instead! 😝
So, this is a second course whose name derives from meunier, i.e. the miller who grinds the flour.
Why the miller? Well, this recipe also requires some flour in addition to butter... and a fresh sole, of course!! 😁
So simple, quick and delicious a dish that you will literally end up licking your fingers!
You know, it's a given: if you use fresh, genuine and quality ingredients, even a pinch of flour and a bit of butter can work wonders!! 😉

Sole à la meunière - Meunière sole

Ingredients for 2:
2 whole soles
30g butter
flour
lemon juice
salt


Puliamo le sogliole togliendo il sacchetto delle viscere che si trova nella parte subito sotto la testa (1).
Dopodiché, con un coltello affilato togliamo le squame grigie sulla schiena delle sogliole (2)
Clean the soles, remove the viscera, that you will find under the head (1).
Then, using a sharp knife, scale the grey skin (2)


e quelle bianche nella parte posteriore.
Non togliamo la pelle, altrimenti rischiamo che il pesce si sfaldi durante la cottura.
and the white one.
Do not remove the entire skin, otherwise the fish could not remain entire.


Laviamo e asciughiamo il pesce, poi infariniamolo con cura e saliamo.
Wash and dry the fish, then dredge and season it with salt.


Sciogliamo il burro in una padella e cuociamo le sogliole circa 3 minuti per lato.
Melt the butter in a pan and cook the soles for 3 minutes every side.


Impiattiamo ancora calde
Plate it still hot


e portiamo in tavola cospargendo con il burro rimasto e qualche goccia di succo di limone.
and serve pouring over the fish the butter and some drops of lemon juice.

Oggi niente zucche sghignazzanti o scheletri minacciosi... ma vi prometto che questa pizza è buona... da paura!!! ^_^
Ecco un nuovo impasto preparato usando la pasta madre invece del lievito di birra... anzi no, ho usato l'esubero di pasta madre!! :D
Ed essendo la prima volta che mi cimentavo nel preparare una pizza con l'esubero di pasta madre, ho preso spunto da questa ricetta collaudata ;)
Ora che ho ripreso, non smetto più!!
Speriamo solo che la pasta madre riesca a sopportare il prossimo trasloco... che è alle porte!! :D


Impasto per pizza con esubero di pasta madre

Ingredienti per 1 teglia 36x47

300g di esubero di pasta madre
240g di farina
150g di acqua
10g di zucchero integrale di canna
10g di sale
15g di olio evo

No sneering pumpkins nor threatening skeletons today... but I promise you that this pizza is literally... terrific!! ^_^
Here a new dough prepared using the sourdough instead of the normal yeast... well not, I used the unfed sourdough!! :D
For this first pizza attempt with unfed sourdough, I took cue from this tested recipe ;)
Now that I started again to use sourdough, I can't stop using it!!
I only hope it will survive the next move... which is just around the corner!! :D


Pizza dough with unfed sourdough

Ingredients for a baking pan 36x47

300g of unfed sourdough
240g all-purpose flour
150g acqua
10g unrefined cane sugar
10g salt
15g extra-virgin olive oil


Mettiamo l'esubero in una ciotola capiente,
Put the unfed sourdough in a big bowl,


aggiungiamo l'acqua
add the water


e facciamo sciogliere il lievito.
and melt the sourdough.


Aggiungiamo la farina e lo zucchero,
Add the flour and the sugar,


mescoliamo, poi aggiungiamo il sale e l'olio.
stir, then add the salt and the oil.


Lavoriamo l'impasto finché non diventa omogeneo.
Knead the dough until it is well combined.


Lasciamolo riposare per circa 3 ore.
Trasferiamo l'impasto in una teglia, rivestita di carta forno e ben oliata, e stendiamolo.
Let it rest for about 3 hours.
Transfer the dough in a baking pan, lined with parchment paper, and roll it out.

Lasciamolo riposare per altre 3 ore, poi farciamo nella maniera che più ci piace.
Questa volta ho optato per una semplice margherita.

E siccome Martedì Grasso si avvicina a grandi passi... urge una bella iniezione di castagnole!!
In Italia le castagnole rappresentano un dolce tipico di Carnevale, ovviamente fritto, tondo e magari anche ripieno di crema o cioccolato... a casa mia no!
A casa mia, nell'entroterra marchigiano, le castagnole somigliano più a delle ciambelle.
Mia nonna le ha sempre preparate così e, come ormai sapete, io sono fedele alla tradizione! :D
Mettiamoci all'opera!!


Castagnole marchigiane

Ingredienti

3 uova
400g di farina + farina per spolverare il piano di lavoro
buccia di limone
120g di zucchero
1 bustina di lievito per dolci
45g di acqua
70g di latte
olio di girasole
zucchero per la finitura

Mardi Gras is coming soon... and I need to prepare a lot of castagnole!!
In Italy castagnole are a kind of fried carnival sweets, round and perhaps filled with custard or chocolate cream... but not at my parent's house!
There, among Marche's hills, castagnole look a bit like donuts.
My grandmother has always prepared them like that and, you know, I want to keep traditions alive! :D
So, let's make castagnole my granma's way!!


Castagnole from Marche

Ingredients

3 eggs
400g all-purpose flour + flour for the worktop
lemon zest
120g sugar
1 packet baking powder
45g water
70g milk
sunflower oil
sugar for the final sprinkling


Rompiamo 3 uova in una ciotola e aggiungiamo lo zucchero.
Break 3 eggs in a bowl and add the sugar


Prendiamo una forchetta e sbattiamo il composto finché non diventa bello spumoso (questa parte ovviamente può essere fatta con uno sbattitore elettrico, ma io ho usato lo stesso attrezzo che usava mia nonna, ritornando così ai tempi dell'infanzia).
Aggiungiamo l'acqua, il latte e la buccia di limone grattugiata (piccola nota dolente: nonna usava aggiungere del mistrà, ma essendone ahimè sprovvista, ho aumentato, di poco, la dose del latte).
Beat the mixture with a fork until it is spumy (you can use an electric beater, but I wanted to use the same tools my granny used, going back to my childhood).
Add water, milk and grated lemon zest (at this point I have a sore point: my grandmother added some mistrà, a local anisette, but I do not have it, so I add a little bit more milk).


Continuiamo a mescolare, poi versiamo il lievito per dolci
Stir, then add the baking powder


e incorporiamo la farina poca alla volta.
and the flour little by little.


Mescoliamo con la forchetta fino a quando non diventa praticamente impossibile
Mix with a fork until you can


e spostiamo l'impasto su una tavola di legno infarinata.
then put the dough on a floured wooden board.


Maneggiamo l'impasto facendo attenzione perché l'interno rimane umido e continuerà ad attaccarsi sul piano di lavoro, ma non c'è da preoccuparsi, basterà spolverare la tavola di quando in quando con la farina e recuperare la pasta attaccata usando una spatola.
Quando avremo un panetto liscio,
Knead the dough and pay attention because it will be sticky, but it's ok, you have only to dust the wooden board with some flour from time to time and use a dough spatula.
Once you have a smooth dough,


possiamo prendere dei pezzettini di pasta, formare dei bastoncini e creare tante piccole ciambelle.
you can take a bit of it, make sticks and then create a lot of small donuts.


Copriamo le ciambelline con uno strofinaccio e mettiamo a scaldare una padella con abbondante olio di semi di girasole.
Quando l'olio sarà ben caldo (cioè quando, immergendo uno stecchino, si formeranno delle bollicine intorno ad esso) immergiamo le castagnole.
Cover the donuts with a cloth and heat abundant sunflower oil in a frying pan.
Once the oil is hot (if you dip a toothpick into the oil and it starts bubbling it's ready for frying) you can carefully add castagnole.


Mettiamo poche castagnole alla volta, così che abbiano spazio sufficiente per muoversi e gonfiarsi.
Imprimiamo alla padella un movimento rotatorio in modo da favorire la lievitazione e la cottura uniforme delle castagnole.
Mi raccomando non facciamo movimenti troppo bruschi altrimenti l'olio fuoriesce e, oltre a sporcare la cucina oltre ogni immaginazione, rischiamo di farci male.
Una volta che le castagnole avranno assunto un bel colorito dorato,

togliamole dal fuoco, scoliamole sulla carta cucina, trasferiamole in un piatto pieno di zucchero e rigiriamole in modo che ne escano completamente ricoperte.
remove them from the pan, let them drain on several layers of absorbent paper towels, then toss them into a plate full of sugar.


Continuiamo a cuocere fino ad esaurimento (delle castagnole, non il nostro) e portiamo in tavola per festeggiare questa ultima domenica di Carnevale!!
