Dopo tante focacce, ecco di nuovo la pizza, ma tranquilli... le focacce non ci stanno abbandonando definitivamente, torneranno! 😉
Questa pizza l'ho assaggiata per la prima volta a casa di amici e  mi è piaciuta così tanto che non sono riuscita a resistere e l'ho preparata anch'io. 😀
Anche se all'inizio l'abbinamento prosciutto-caprino-miele sembrava azzardato, al momento dell'assaggio ogni dubbio è scomparso e l'unico pensiero rimasto è stato questo: è una pizza assolutamente divina!! Gnamm!! 😋
E allora eccomi qui a prepararla!


Pizza prosciutto crudo, caprino e miele

Ingredienti

1 impasto per pizza (potete trovare qui la ricetta)
passata di pomodoro
1 mozzarella
1 caprino fresco
prosciutto crudo
miele
sale
olio evo

After so many focacce... pizza is back!
But, never mind, focaccia will keep us company again soon! 😉
I had this pizza at a friend of our's and I liked it so much that I decided to repeat it. 😀
Even if the combination Parma ham-goat's cheese-honey seemed strange at first, after eating a bite every doubt disappeared and my only thought was: this pizza is absolutely delicious!! Yummy!! 😋
So, get ready. Let's make it!


Parma ham, goat's cheese and honey pizza

Ingredients

1 pizza dough (you can find here the recipe)
tomato sauce
1 mozzarella cheese
1 fresh goat's cheese
Parma ham
honey
salt
extra-virgin olive oil


Stendiamo l'impasto in una teglia rivestita di carta forno, distribuiamo la passata di pomodoro, condiamo con sale e olio e lasciamo riposare circa un'ora.
Roll the dough out in a baking pan lined with parchment paper, distribute the tomato sauce, season with salt and olive oil and let it rest for about an hour.


Nel frattempo tagliamo la mozzarella a dadini e lasciamola scolare.
Accendiamo il forno a 200°C e mettiamo la mozzarella sulla pizza.
Meanwhile dice the mozzarella and let it drain.
Preheat the oven at 200°C and place mozzarella on top of pizza.


Inforniamo e cuociamo per circa 20 minuti.
Affettiamo il caprino e distribuiamolo sulla pizza quando sarà cotta.
Cospargiamo con il miele,
Put into the oven and bake it for about 20 minutes.
Slice the goat's cheese and place it on top of pizza once it is cooked.
Pour some honey on top,


aggiungiamo il prosciutto crudo e portiamo in tavola.
Che ne dite? Non è deliziosa? 😋
add the Parma ham and serve it.

Si ha sempre voglia di qualcosa di diverso per il pranzo della domenica.
A casa mia si preparava sempre qualcosa al forno, soprattutto pollo con patate e io... sto mantenendo la tradizione! :D
Mi piace cuocere la carne al forno, anche perché le preparazioni richieste sono spesso molto veloci e una volta infornato, puoi permetterti di fare altro ;)
Per il pranzo di oggi non avevo a disposizione il pollo, così ho usato quello che avevo a casa: un bel pezzo di costine di maiale!
L'ho condito con due ingredienti che apparentemente non vanno d'accordo: miele e limone!
Il risultato è stata una carne deliziosa, dal sapore agrodolce, dove la dolcezza del miele stemperava l'acidità del limone... da leccarsi i baffi!! :D

We always want a peculiar dish to serve for lunch on Sunday.
At home, when I was a child, we used to have an oven-baked dish, mostly chicken with potatoes and I am... carrying on with this tradition! :D
I love oven-baked meats, also because they need very quick preparations and, once put inside the oven, you can do whatever you want ;)
For today's lunch there was no chicken, but I used what I had at my disposal: an awesome pork spare ribs!
I seasoned it with two ingredients that you wouldn't imagine getting along very well: honey and lemon!
The final result was an amazing meat with a sweet and sour taste, because the sweetness of the honey moderates the acidity of the lemon... a finger-licking meal!! :D


Maiale agrodolce al forno

Ingredienti:
500g costine di maiale
4 patate
2 limoni
miele
sumac
sale
pepe
olio evo



Sweet and sour roast pork

Ingredients:
500g pork spare ribs
4 potatoes
2 lemons
honey
sumac
salt
pepper
extra-virgin olive oil

Incidiamo la carne, poi condiamo con sale e pepe e cospargiamo di miele.
Score the meat in a crosshatch pattern, then season with salt and pepper and spoon the honey over the top.


Tagliamo a fette i limoni e disponiamoli sopra la carne.
Slice the lemons and put over the top of the meat.


Aggiungiamo le patate tagliate a spicchi e condiamole con sale e pepe.
Condiamo con il sumac e cospargiamo di olio evo.
Add the potatoes sliced in quarters and season them with salt and pepper.
Season with sumac and drizzle with the olive oil.


Preriscaldiamo il forno a 200°C, inforniamo e cuociamo per un'ora e mezzo.
Controlliamo la cottura e quando la carne sarà cotta anche all'interno, sforniamo.
Bake in a preheated oven at 200°C for one hour and a half.
Check the doneness of the meat and remove it from the oven.


Tagliamo le costine e serviamo con le patate.
Slice the spare ribs and serve with potatoes.

Finalmente sabato!

Finalmente possiamo partire col piede giusto!
Come avrete capito oggi facciamo colazione con una ricetta a dir poco semplicissima, ma che riesce a darti la carica per tutta la giornata!
Ed è pure l'ideale per chi sta a dieta!
Cosa si può volere di più dalla colazione?
Forse... un caffè!! :D

As you can see, today we have a sweet breakfast with a very simple recipe, for giving us strength to star all day face !
And it's perfect if you are on a diet!

Yogurt, ribes rosso e grano soffiato

Ingredienti per 1 ciotola:
100g di yogurt greco
15g di ribes essiccato
10g di grano integrale soffiato
1 cucchiaino di miele



Yogurt, currants and puffed wheat

Ingredients for 1 bowl:
100g greek yogurt
15g dry currants
10g puffed wheat
1 tsp honey

In un ciotola mettiamo lo yogurt, il ribes e il grano soffiato.
Put the yogurt, currants and puffed wheat in a bowl.


Aggiungiamo il miele, mescoliamo ed ecco pronta una colazione deliziosa e salutare!!
Add honey, mix and a very healthy and delicious breakfast is ready!!

Dopo il periodo Erasmus trascorso in Polonia, una domanda ha continuato a ronzarmi per la testa, senza riuscire a trovare una risposta...
Finalmente, dopo anni sono riuscita a risolvere l'arcano!!
Mi sembra ieri che, passeggiando per le strade della gelida Poznan, vedemmo all'interno di un ristorante un prosciutto da affettare e lo indicai alla mia amica Marie dicendo: "Vedi, quello è il prosciutto italiano." Lei mi guarda con gli occhi spalancati e dice "Wow! Mai vista una cosa simile!"
Da quel momento ho continuato a chiedermi come il mondo non italiano potesse concepire la vita senza il prosciutto :D
Ora posso dire di aver trovato la risposta... e ho anche capito perché non sentano la mancanza di una bella fetta di questo nostro prodotto... (certo, tutto questo senza considerare che oggi puoi comprare del prosciutto in ogni supermercato del globo terrestre!!)
Gammon!!
E che cos'è? Il prosciutto anglosassone!
Stessa parte del maiale, la zampa posteriore, viene sottoposto a stagionatura, volendo viene affumicato, ma, a differenza di quello che facciamo noi, viene di solito disossato e non si può mangiare crudo.
Va cotto al forno, alla griglia o in padella.
Per capirci, avete presente quel bel tocco di carne inciso dalla parte della cotenna e disseminato di chiodi di garofano che si vede sulle tavole inglesi e non solo?
Ecco quello è il "gammon" e vi posso assicurare che è di una squisitezza incredibile! ;)


Honey and mustard roast gammon - Prosciutto cotto al forno con miele e senape

Ingredienti per 4

1kg di gammon affumicato
miele di acacia
senape in grani
chiodi di garofano

After spending my Erasmus term in Poland, I began to wonder but could not find the answer...
After all these years, I now solved this enigma, finally!!
It seems just like yesterday that, while walking along the streets of the icy-cold Poznan, we saw an entire Parma ham ready to be sliced in a restaurant and I showed it to my friend Marie: "See, that is an Italian ham." She looked at me with her eyes wide open and said: "Wow! I have never seen anything like that!"
From that moment, I asked myself many questions about living a life without knowing the authentic pleasure provided by a slice of our beloved Parma ham :D
Now I think I found the answer... and I know why non-Italians don't shed a tear about not having this wonderful Italian product... (even if you can buy some Parma ham in every shop of the globe nowadays!!)
Gammon!!
What is it? Let's say it's the anglosaxon ham!
It still is our beloved pork leg. It is cured and, if you want, smoked... but, unlike our ham, it usually is deboned and you cannot eat it raw.
You have to bake it or grill it or, if you prefer, stir-fry it.
Do you know that meat with a crosshatched diamond pattern scored on the skin and full of cloves you can see on English and American tables?
Well, that is gammon and I can assure you... it really, really is delicious!! ;)


Honey and mustard roast gammon

Ingredients for 4

1kg smoked gammon
acacia honey
whole-grain mustard
cloves


Accendiamo il forno a 190°C.
Incidiamo la cotenna del gammon e inseriamo dei chiodi di garofano.
Mettiamolo in una teglia da forno e cospargiamolo da ambo i lati con del miele e della senape all'antica in grani. Non ho indicato quantità perché dipendono dalla dimensione del pezzo di carne e dai gusti personali.
Massaggiamo per far assorbire meglio il condimento.
Mi raccomando, non saliamo e non pepiamo, perché la stagionatura e l'affumicatura hanno già reso la carne saporita.
Preheat the oven at 190°C.
Score the skin in a crosshatch diamond pattern and season each side with honey and whole-grain mustard. I did not mention the quantities because they depend on the size of the gammon and on personal taste.
Massage the skin to distribute the seasoning and let the gammon soak it up.
Be sure, you don't have to season with salt and pepper, because the meat is already tasty thanks to the cure and the smoking process.


Copriamo la teglia con l'alluminio, inforniamo a forno caldo e lasciamo cuocere per 1 ora e mezzo (bisogna contare 30 minuti ogni 500g di carne più altri 30 minuti finali).
Dopo circa 45 minuti giriamo la carne sottosopra in modo che la cottura sia uniforme.
Togliamo l'alluminio quando manca una decina di minuti al termine della cottura.
Cover the baking pan with aluminium foil, put into a preheated oven and cook for an hour and a half (you must roast for 30 minutes per 500g and further 30 minutes at the end of the cooking time).
After 45 minutes, flip the gammon over to cook it uniformly.
Remove the foil 10 minutes before the end of the cooking time.


Sforniamo e lasciamo riposare 10 minuti.
Poi tagliamo a fette, bagniamo con il sughetto della cottura e accompagniamo con delle patate lesse.
Remove from the oven and let it rest for at least 10 minutes.
Slice the gammon, soak the slices in the hot gravy and serve with boiled potatoes.

Oggi è martedì e prepariamo pesce.
Dal momento che il salmone gravlax ci è piaciuto tantissimo, abbiamo voluto trovare un'alternativa e ci siamo imbattuti in una fantastica ricetta con il miele d'acacia e la buccia d'arancia, che donano un tocco aromatico al pesce.
Il salmone si trasforma così in un ingrediente prezioso per dare spessore a tanti tipi di piatti, ma risulta delizioso anche se scottato per pochi minuti e portato in tavola accompagnato da verdure.


Salmone marinato al miele e all'arancia

Ingredienti:
1kg di salmone (un trancio unico)
13 g di buccia di arancia grattugiata
13g di sale
63g di zucchero
63g di miele d'acacia
10g di pepe

Today it's Tuesday and we are having fish.
Since we really liked the gravlax, we were looking for an alternative and found a fantastic recipe with acacia honey and grated orange peel, that give the fish a very aromatic taste.
In this way, not only does the salmon become a key ingredient to add savory depth to any dish, but it is also delicious if quickly fried and served with vegetables.


Honey-orange marinated salmon

Ingredients:
1kg skin-on salmon fillet
13g grated fresh orange peel
13g salt
63g sugar
63g acacia honey
10g pepper


Prendiamo il trancio di salmone intero e, seguendo lo stesso procedimento usato per il gravlax (potete trovare la ricetta qui), dividiamolo a metà.
Dovendo marinare due filetti in due contenitori diversi, prepariamo il mix di sale, pepe, zucchero e buccia d'arancia in due ciotole distinte, dividendo per due le quantità iniziali.
Take the salmon and cut in halves, as you can see here, in gravlax recipe (here the recipe).
Prepare the mix of salt, pepper, sugar and grated orange peel and divide the ingredients in two different bowl because we will marinate the salmon in two different containers.


Prendiamo un filetto,
Take one piece of salmon,


cospargiamolo con metà miele d'acacia
sprinkle it with half of the acacia honey


e con il mix preparato precedentemente.
Massaggiamo con delicatezza in modo da distribuire bene il mix di sale, pepe, buccia d'arancia e zucchero e ripetiamo lo stesso procedimento con il secondo filetto.
and the mix already prepared.
Gently massage the salmon in order to distribute the mix of salt, pepper, sugar and grated orange peel, then repeat the operation with the second piece of salmon.


Copriamo i due contenitori e lasciamoli a marinare in frigorifero per 4 giorni.
Dopo il tempo di riposo, il salmone apparirà così:
Cover the two containers and leave them to marinate into the fridge for 4 days.
Once these days are passed, the salmon will be like that:


Prendiamo il salmone, laviamolo per bene sotto l'acqua corrente per togliere la marinatura,
Take the salmon, wash it under running water to remove all the marinate,


tamponiamolo e disponiamolo su un tagliere.
Affettiamolo sottilmente con un coltello ben affilato e portiamo in tavola.
dry the salmon with paper towels and place it on a wooden cutting board.
Slice it thinly with a very sharp knife and serve it.

Salmone marinato al miele e all'arancia

Possiamo mangiarlo così nature, oppure saltarlo leggermente in padella e accompagnarlo con olive e rucola ^_^
We can eat it like that or quickly fry it and serve with olives and arugula ^_^

Cosa fare quando ti viene un'irrefrenabile voglia di pancarrè, ma non sei in possesso di uno stampo adatto?
Ci pensi su un attimo e cerchi di trovare una soluzione, che non sia quella di uscire di casa e comprarlo, dal momento che di domenica i negozi sono tutti chiusi.
Mumble, mumble... spremetevi mie piccole meningi!!
Detto fatto!
Prendi un foglio di carta da forno e provi a piegarlo fino a creare un simil stampo!
Facile no? Divertente e pure economico! :D
Ora non sono un genio dell'origami o simili, ma alla fine prova che ti riprova, ecco uscir fuori una cosa accettabile.
Il dubbio che mi tormenta ora è questo: riuscirà a dare la forma giusta al pane?
Ai posteri l'ardua sentenza e se anche la forma non sarà perfetta... pazienza, tanto il mio motto è: l'importante è che sia buono!! :D
E poi ogni tanto cambiare fa bene, no? ;)


Pane in cassetta homemade

Ingredienti

250g farina normale
250g farina di forza
200ml di latte
50ml d'acqua
80g di burro
10g di lievito di birra
1 cucchiaio di miele
10g di sale


What can you do if you want sandwich bread, but you don't have the right loaf pan?
Think about it for a while and try to find a solution when you cannot go out and buy it, because it is Sunday and all the stores are closed.
Mumble, mumble... I'm racking my brains!!
Easy said, easy done!
Take a sheet of parchement and try to fold it until you create a parchment loaf basket!
Easy, isn't it? And funny and cheap! :D
Now, I'm not an origami expert, but if you keep trying over and over again... at the end you will succeed!
The question that haunts me now is: will this parchment basket give the dough the right shape?
Posterity will judge and even if the shape is not fine... well, never mind, my motto is: as long as it tastes good!! :D
By the way, sometimes change is good, isn't it? ;)


Homemade sandwich bread

Ingredients

250g all purpose flour
250g strong flour
200ml milk
50ml water
80g butter
10g fresh yeast
1tbsp honey
10g salt

In una ciotola mettiamo l'acqua, il lievito e il miele e aspettiamo finché il lievito non si sarà sciolto.
Aggiungiamo la farina, il sale e il latte e cominciamo a mescolare.
Prendiamo il burro, precedentemente tolto dal frigorifero, tagliamolo in piccoli pezzetti e aggiungiamolo all'impasto.
Lavoriamo la pasta senza aggiungere altra farina, anche se all'inizio l'impasto sembrerà troppo appiccicoso. Basta continuare a maneggiarlo per un quarto d'ora e diventerà ben amalgamato, liscio e si staccherà dalle pareti della ciotola senza alcun problema.
Put the water, fresh yeast and honey in a bowl and let them stand until the yeast is dissolved.
Add flour, salt and milk and then stir.
Take the butter, previously removed from the fridge, cut into small pieces and add it to the dough.
Knead the dough without add any flour. At the beginning the dough will be very sticky, but if you continue to knead for about 15 minutes, it will be well blended, smooth and it will not stick against the sides of the bowl anymore.


Copriamo l'impasto con uno strofinaccio e lasciamolo lievitare in un luogo caldo e al riparo da correnti d'aria per un'oretta o finché non sarà raddoppiato di volume.
Cover the dough with a towel and let it rise in a warm, draft-free place for about one hour or until it has doubled in size.


Trascorso il tempo della prima lievitazione, riprendiamo l'impasto, schiacciamolo e diamogli una forma compatibile con il nostro fantastico stampo casalingo, che avremo adagiato in una tortiera.
After the first rise, turn the dough out, flatten it out with your hands and shape into a loaf, fitting our parchment basket, which we should put into a baking pan.


Mettiamo la pasta nello stampo e lasciamo lievitare ancora, coprendo il tutto con un canovaccio.
Put the dough into the basket, cover it with a towel and let it rise again.


Dopo la seconda lievitazione, quando il pane avrà raggiunto i bordi dello stampo, mettiamo in forno preriscaldato a 200°C.
Lasciamo cuocere per 30-40 minuti, facciamo la prova dello stecchino e se il pane risulta asciutto all'interno, togliamolo dal forno,
After the second rise, when the dough has started to dome over the edge of the pan, put it into a pre-heated oven at 200°C.
Cook for 30-40 minutes, check for doneness using a toothpick and, if the bread is done (the toothpick comes out from the center of the bread clean), take it out of the oven,


spalmiamo sopra del latte e lasciamo raffreddare.
brush it with milk and let it cool.


Alla fine togliamolo dallo stampo e...
Remove the bread from the pan and...


sbizzarrirci con tutte le ricette che vogliamo! ;)

Ps: Lo stampo ha retto bene. Il pane non ha esattamente la forma di un normale pancarrè, ma, poco male, il sapore era eccellente!! :D
Ps: The parchment basket worked perfectly. The bread doesn't have exactly the normale shape of a sandwich bread, but never mind, the taste was awesome!! :D
